Ingredients

  • 450g chicken mini fillets
  • 2 tbsp vegetable oil
  • 1 sachet Knorr Pan Cook Piri Piri Seasoning Mix
  • 100g chorizo sausage, sliced
  • 2 x 250g sachets microwaveable rice
  • 400g can kidney beans, drained
  • 340g can sweetcorn, drained
  • Handful fresh coriander, chopped

Method

  • In a bowl mix the chicken with the oil, add the Knorr seasoning mix and stir well to coat.
  • Over a medium heat pan-fry the chicken and chorizo together in a large nonstick frying pan, turning occasionally until golden brown for approximately 8-10 minutes, until the chicken is cooked.
  • Add the rice, kidney beans and sweetcorn and heat thoroughly.
  • Serve immediately garnished with coriander.
