One Pot Piri Piri Chicken

Ingredients
- 450g chicken mini fillets
- 2 tbsp vegetable oil
- 1 sachet Knorr Pan Cook Piri Piri Seasoning Mix
- 100g chorizo sausage, sliced
- 2 x 250g sachets microwaveable rice
- 400g can kidney beans, drained
- 340g can sweetcorn, drained
- Handful fresh coriander, chopped
Method
- In a bowl mix the chicken with the oil, add the Knorr seasoning mix and stir well to coat.
- Over a medium heat pan-fry the chicken and chorizo together in a large nonstick frying pan, turning occasionally until golden brown for approximately 8-10 minutes, until the chicken is cooked.
- Add the rice, kidney beans and sweetcorn and heat thoroughly.
- Serve immediately garnished with coriander.
