Gluten Free Asparagus Soup
Prepare to be bowled over by this sensational gluten-free seasonal soup. Combining the fresh flavour of asparagus with the richness of one of our gluten-free Vegetable Stock Cubes, it’s a delicious warming snack or light lunch.

Ingredients
- 20g gluten free spread
- 1 onion, chopped
- 400g asparagus, roughly chopped
- 800ml semi-skimmed milk
- 1 Knorr Vegetable Stock Cube
- Ground black pepper to taste
Method
- Heat the spread in a large pan add the onion and sweat for 5 mins or until soft but not browned.
- Add the asparagus, milk and Knorr Vegetable Stock Cube.
- Bring to the boil then reduce heat and simmer for 5-10 minutes until asparagus is tender.
- Blend the soup in a liquidizer or use a hand blender. Season to taste with black pepper. Delicious with a swirl of cream and a sprinkle of snipped chives.
