Prepare to be bowled over by this sensational gluten-free seasonal soup. Combining the fresh flavour of asparagus with the richness of one of our gluten-free Vegetable Stock Cubes, it’s a delicious warming snack or light lunch.

Ingredients

  • 20g gluten free spread
  • 1 onion, chopped
  • 400g asparagus, roughly chopped
  • 800ml semi-skimmed milk
  • 1 Knorr Vegetable Stock Cube
  • Ground black pepper to taste

Method

  • Heat the spread in a large pan add the onion and sweat for 5 mins or until soft but not browned.
  • Add the asparagus, milk and Knorr Vegetable Stock Cube.
  • Bring to the boil then reduce heat and simmer for 5-10 minutes until asparagus is tender.
  • Blend the soup in a liquidizer or use a hand blender. Season to taste with black pepper. Delicious with a swirl of cream and a sprinkle of snipped chives.
