Gluten Free Lentil & Bacon Soup
Ideal as a comforting lunch, this delicious gluten-free soup raises a warm smile with every bowl. Made with onion, garlic, unsmoked bacon, red lentils, thyme and a Knorr gluten-free Ham Stock Cube, it’s a truly mouth-watering prospect.

Ingredients
- 1 tablespoon vegetable oil
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 sticks celery chopped
- 2 cloves garlic, crushed
- 85 - 115g unsmoked bacon, chopped
- 150g red lentils
- 1.2 litre stock, made with 1 Knorr Ham Stock Cube
- Few sprigs fresh thyme
- Freshly ground pepper
Method
- Heat the oil and add onion, carrots, celery and bacon and fry for 4 - 5 minutes until the bacon has browned and onions are soft.
- Add remaining ingredients and simmer gently for 35 – 40 minutes stirring occasionally.
- Serve chunky or can be blended in liquidiser.
