Ideal as a comforting lunch, this delicious gluten-free soup raises a warm smile with every bowl. Made with onion, garlic, unsmoked bacon, red lentils, thyme and a Knorr gluten-free Ham Stock Cube, it’s a truly mouth-watering prospect.

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 sticks celery chopped
  • 2 cloves garlic, crushed
  • 85 - 115g unsmoked bacon, chopped
  • 150g red lentils
  • 1.2 litre stock, made with 1 Knorr Ham Stock Cube
  • Few sprigs fresh thyme
  • Freshly ground pepper

Method

  • Heat the oil and add onion, carrots, celery and bacon and fry for 4 - 5 minutes until the bacon has browned and onions are soft.
  • Add remaining ingredients and simmer gently for 35 – 40 minutes stirring occasionally.
  • Serve chunky or can be blended in liquidiser.
