This is a fantastic Spaghetti and Prawns recipe. The secrets of this dish lie in the great stock, a nice combination of your favourite seafood cooked with garlic and some super fresh cherry tomatoes which, add great colour and sweetness to the dish.

Ingredients

  • 350g spaghetti or pasta shapes
  • 3 tbsp olive oil
  • 350g seafood e.g. raw tiger prawns or seafood mix
  • 6 spring onions, sliced
  • 2 cloves garlic, crushed
  • 250g cherry tomatoes, halved
  • 50ml dry white wine
  • Juice of half a lemon
  • 1 Knorr Fish Stock Cube dissolved in 75ml boiling water
  • 2 tbsp chopped fresh herbs
  • 25g Parmesan cheese, grated

Method

  • Cook the spaghetti according to the packet directions, drain.
  • Meanwhile, heat 2 tablespoons of the oil in a large saucepan. Add the prawns or mixed seafood and cook for 3-4 minutes, turning once until the prawns start to turn pink. Add the spring onions and garlic and cook for a further minute. Add the tomatoes and cook on medium heat for further 2 minutes.
  • Add the wine, lemon juice and Knorr Fish Stock and bring to the boil. Stir the mix into the hot spaghetti with the remaining oil and herbs.
  • Serve immediately, sprinkled with Parmesan cheese.
  • Tip: For a great tasting herb combination try mixing some chopped parsley, thyme and dill.
