BRAZILIAN MEATBALLS (KIBES)
Meatballs with a difference. Lime and coriander combine to infuse your meat with an exciting taste of Brazil. Great at barbeques or as a summery side-dish.

Ingredients
- 1 onion, finely chopped
- 2 tbsp Flora Buttery
- 2 cloves of garlic, finely chopped
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tbsp. of fresh chopped parsley
- 1 Knorr Beef Stock Pot
- 250ml water
- 250g couscous
- 500g minced lean beef
- 3 tbsp fresh mint leaves
- Salt and pepper to taste
- Flora Cuisine for frying
Method
- Sauté half of the chopped onions in 2 tablespoons of Flora until soft and aromatic. Add garlic, cinnamon and nutmeg. Cook for 2 minutes. Stir in parsley and cook for 1 more minute.
- Prepare stock from Knorr Stock Pot and water. Pour over couscous. Put to one side for about 10 minutes.
- Combine minced beef with fluffed couscous and mint leaves. Add onion and spice mixture. Knead the mixture for a few minutes to make it soft and smooth. Put to one side to chill for 15 minutes. If you have time, chill beef for several hours. It will be easier to shape the kibe.
- Shape meat into little balls and fry, working in batches, in Flora Cuisine until deep brown and crispy. Serve with lime wedges and simple dipping sauce.
- Tip: Make a refreshing yoghurt based dipping sauce with cucumber, fresh coriander and a dash of lime juice.
