Try our great tasting version of this Mexican favourite, Huevos Rancheros. Spicy beef is cooked with black beans and Knorr Mexican Flavour Pot and served on warmed tortillas with fried eggs. This is a breakfast of Mexican champions.

Ingredients

  • 1 ½ tbsp oil
  • 1 onion, finely chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 100g lean minced beef
  • 1 courgette, finely chopped
  • 1 garlic clove, crushed
  • 1 red chilli, seeds left in, finely chopped
  • 1 Knorr Mexican Flavour Pot
  • 100ml tomato passata
  • 400g can black beans (or chickpeas), rinsed and drained
  • 4 small corn tortillas (or flour tortillas)
  • 4 eggs
  • ¼ tsp ground black pepper
  • 1 spring onion, finely chopped
  • 3 tbsp chopped coriander

Method

  • Heat 1 tablespoon of the oil in a large frying pan over medium-high heat. Add the onion, peppers, minced beef and courgette. Cook for 3 minutes or until onion has softened but not coloured.
  • Add the garlic, chilli and Knorr Mexican Flavour Pot and cook for 3 minutes, until vegetables have softened and are starting to colour. Add tomato passata and black beans (or chickpeas) to the pan and cook for 3 minutes until beans are heated through. Set aside and keep warm.
  • In a separate pan, gently dry fry the corn tortillas for 1 minute on each side. Remove from pan and place on warm serving plates.
  • In same frying pan add ½ tablespoon of oil, bring to a gentle heat and crack eggs into the pan one by one. Cook slowly for 5-6 minutes until the egg white has cooked through and the yolk is set to your liking. Pour the warm beef sauce on top of the tortillas and top with the eggs.
  • Sprinkle with black pepper, spring onions and chopped coriander to serve.
  • Alternatively, place the lightly fried eggs over the beef mince and place the frying pan under the grill for 2 minutes before serving. Serve with guacamole and sour cream.
