Cleanse your palate with this light and lively cucumber salad. The cucumber is drizzled with a fresh, tangy dressing made from Knorr Mixed Herbs Flavour Pot, creamy feta cheese and pomegranate seeds. A perfect summer salad and a great picnic treat.

Ingredients

  • 1 Mixed Herbs Flavour Pot
  • 1 tbsp fresh dill, chopped
  • ½ tsp dried oregano
  • Juice of 1 lemon
  • ¼ tsp ground black pepper
  • 2 tbsp olive oil
  • 1 cucumber, sliced
  • ½ red onion, finely sliced
  • 50g hazelnuts, toasted and roughly chopped
  • 100g feta, crumbled (or a similar vegetarian alternative)
  • Seeds from 1 pomegranate

Method

  • To make the dressing, combine the Mixed Herbs Flavour Pot, dill, oregano, lemon juice, black pepper and olive oil. Set aside.
  • In a large bowl combine together the cucumber, red onion, hazelnuts and feta. Serve drizzled with the herb dressing, and finish with the pomegranate seeds.
  • Serve with lettuce leaves and couscous as the perfect accompaniment to grilled meats.
