Chicken Casserole with Bacon and Shallots

Ingredients

  • 2 tbsp. olive oil
  • 4 chicken thighs
  • 4 chicken drums ticks
  • 12 small shallots
  • 50g bacon
  • 2 celery sticks
  • 1 tbsp. corn flour
  • 50ml light cream
  • A handful of fresh parsley
  • Knorr® Organic Chicken Stock Powder

Method

  • Preheat the oven to 180°C. Peel the shallots but leave whole. Dice bacon. Slice the celery. Heat the oil in a frying pan and sauté chicken until golden, place in a casserole. Add the shallots and bacon and fry until lightly golden and add to the casserole.
  • Dissolve 1 tbsp. Knorr® Organic Chicken Stock Powder in 500 ml of warm water. Pour over the chicken and add the celery. Cover and cook in an oven for 50-60 minutes or until cooked through.
  • Blend the corn flour with 1-2 tablespoons of cold water and stir into the casserole, return to the oven for 5 minutes. Serve with the cream stirred through and sprinkle with parsley.
  • Add other veggies like carrots, parsnips, peas to the casserole. Mix Knorr® Organic Chicken Stock Powder with a can of crushed tomatoes instead of water.
