Simple Cauliflower Cheese
You’ve seen me make the white sauce. So, how do we use it? I’m going to use it with cauliflower to make a cauliflower cheese.

Ingredients
- Knorr Chicken Stock Cube (1 per vegetable dish)
- 1 serving Bechamel sauce
- Cauliflower
- Grated cheese
Method
- Place the cauliflower in a saucepan of boiling water and add 1 Knorr Chicken Stock Cube.
- Once cooked, drain the cauliflower. You must make sure it is well drained.
- Place in a dish and cover with a couple of handfuls of grated cheese (mature Cheddar cheese is my favourite). Some people put the cheese inside the sauce; I always put it on the actual cauliflower.
- Pour the white sauce over the cheese; be generous.
- Place under a hot grill for 3–4 minutes – not a long time as the cauliflower is hot, the sauce is warm and the cheese has only got to melt before you can serve it.
- Why not try using broccoli instead of cauliflower or how about a mix of both? Bechamel sauce freezes really well so you could make extra and freeze for another day. Simply defrost in the fridge and use the same day for whatever dish you fancy...lasagne, fish in white sauce or macaroni cheese to name just a few!
