Quick Swede Puree
For a surprisingly quick and easy seasonal accompaniment to your favourite autumnal pies and casserole dishes, try mashed swede instead of the usual mashed potato.

Ingredients
- 1 swede
- 25g butter
- Splash of water
- Salt and pepper to taste
Method
- Simply cut the top and bottom off a swede, and peel off all the skin on the outside.
- Cut it into cubes measuring around ½ to ¾ of an inch and throw them in a glass bowl with a tiny bit of water – around ½ a centimetre or a centimetre in the bottom of the bowl should do it.
- Add 25g of butter. Cover in cling film (don’t forget to pierce the film) then microwave for 12–15 minutes, after which time it should be soft.
- Then it’s up to you: either mash it by hand or liquidise it, depending on how rustic you like it. Season to taste. There you have it – a simple root vegetable puree.
