Marco's Quick Summer Salad
Simple fresh summer side salads.

Ingredients
- 4tbsps mayonnaise
- 200g broad beans
- 200g peas
- 225g basmati rice, cooked
- ½ bunch spring onions
- Fresh chives
Method
- Take some shelled broad beans and peas.
- Add some mayonnaise and a little cooked white rice.
- Add some sliced sping onion, some chives.
- Mix it all together then add some olive oil and fresh lemon juice. Simple, quick and delicious.
