Ketchup Vinaigrette
This vinaigrette is based on the humble tomato ketchup and combines ingredients you’re bound to have in your cupboard with plenty of fresh herbs to make a really tasty vinaigrette for fish or chicken. Try it with salmon fillets or roast chicken.

Ingredients
- 200ml olive oil
- 150ml tomato ketchup
- 2tbsps chopped shallots
- 1tbsp chopped tarragon
- 1tbsp chopped chives
- 1tbsp chopped chervil
- 1tbsp Worcestershire sauce
- Tabasco®
- 1tsp white wine vinegar
- Fresh herbs to garnish (e.g. parsley, chervil, basil or tarragon)
Method
- Mix everything together. I’ve suggested chervil and tarragon for this recipe but if you can’t get chervil use parsley. If you can’t get tarragon, use basil. It’s your choice.
