Quick Salsa Verde

Ingredients
- A big handful of flat leaf parsley, roughly chopped
- 2 anchovy fillets, crushed into a paste with the side of a knife
- 1–2tsp of English mustard
- 1tsp capers
- 1 white of a hard boiled egg, coarsely chopped
- 150ml olive oil
- 1 Knorr Vegetable Stock Cube
Method
- Take a large handful of flat parsley and chop it down, not too fine.
- Take a couple of anchovy fillets and chop them a little bit.
- Then using the back of your knife, chop them into a paste.
- Put the parsley and anchovies into a bowl.
- Add a teaspoon of English mustard and a tablespoon of capers (chopped if you like).
- Take the white of a boiled egg and chop coursely.
- Mix it all together.
- Add 200ml extra virgin olive oil, mix and season with a sprinkle of Knorr Stock Cube instead of salt and pepper.
