Fresh Spinach Salad
The combination of textures and flavours in this salad – which includes spinach, bacon and soft boiled eggs – is a real treat. Serve with warm bread for dipping.

Ingredients
- 500g fresh spinach leaves
- 4–5 strips bacon, fried and crumbled
- 2–3 eggs
- Salad Dressing, try vinaigrette or creamy yoghurt
Method
- Rinse the spinach leaves thoroughly. Dry well using the paper towels.
- Fry or soft boil eggs. Toss gently spinach and bacon, in salad bowl.
- Prepare the dressing. Pour over the salad. Top each salad portion with an egg.
