Whether it’s piled into a jacket potato, nestled on top of your favourite pasta or served as a vegetable base for chicken or fish dishes, this Easy Ratatouille is a versatile addition to your kitchen repertoire.

Ingredients

  • 3tbsps olive oil
  • Knorr Vegetable Stock Cube
  • 2 onions, slivered
  • 2 aubergines, cut into 1cm cubes
  • 2 courgettes, cut into 1cm cubes
  • 4 cloves garlic, minced
  • 4 medium tomatoes chopped or 1 can of tomatoes
  • 1tbsp finely chopped fresh thyme
  • A handful of chopped fresh basil

Method

  • Heat the olive oil in a heavy pot, then add onions. Saute gently until fragrant. Add aubergine. Stir to cover with olive oil. Cook the aubergine until slightly brown and softened.
  • When the aubergine softens add the courgette. Stir again and cook for 3–4 minutes.
  • Add garlic and tomatoes.
