Easy Ratatouille

Ingredients
- 3tbsps olive oil
- Knorr Vegetable Stock Cube
- 2 onions, slivered
- 2 aubergines, cut into 1cm cubes
- 2 courgettes, cut into 1cm cubes
- 4 cloves garlic, minced
- 4 medium tomatoes chopped or 1 can of tomatoes
- 1tbsp finely chopped fresh thyme
- A handful of chopped fresh basil
Method
- Heat the olive oil in a heavy pot, then add onions. Saute gently until fragrant. Add aubergine. Stir to cover with olive oil. Cook the aubergine until slightly brown and softened.
- When the aubergine softens add the courgette. Stir again and cook for 3–4 minutes.
- Add garlic and tomatoes.
