Classic Potato Salad
Potato salad is such a versatile dish – going with anything from steak, chicken and burgers to quiche and fish. In fact, it complements pretty much any grilled or smoked food. This recipe is so easy to make – just remember to let the salad rest for a few hours to allow all those wonderful flavours to come through.

Ingredients
- 5–6 medium potatoes
- 3 eggs
- 1 medium size onion, finely diced
- 6tbsps Hellmann’s mayonnaise
- 2tbsps of stock made from Knorr Vegetable
- Stock Cube or jelly
- 1–2 tbsp mustard
- 3 green onions, chopped
- Fresh ground pepper
- Finely chopped parsley
Method
- Hardboil the eggs. Chill, peel and chop roughly. Finely chop the onion.
- Cook potatoes al dente and cool. Peel and cube.
- Combine mayonnaise, mustard and stock for a smooth dressing.
- Mix all ingredients. Add the dressing to the salad. Toss gently to combine well. Cover; chill for 2 or more hours for the flavours to blend.
