Lemon and fish make for a naturally delicious pairing, and this Lemon Butter Sauce will complement your fish beautifully. Perfect with sole, salmon or cod.

Ingredients

  • 500g fish fillets (sole, salmon or cod)
  • 1tbsp butter
  • Juice of 1 lemon
  • 1tsp salt
  • 1tsp ground pepper
  • 3 cloves garlic, minced
  • 2tbsps lemon pepper
  • 1tbsp fresh chopped parsley or dill

Method

  • Pre-heat oven to 175°C. Melt the butter in a medium saucepan over medium heat, mix in lemon juice, salt, pepper, parsley, and garlic, bring to the boil and cook for about 10 minutes over a low heat, until slightly thickened.
  • Arrange fish fillets in a single layer on a medium baking sheet. Cover with ½ the butter mixture, sprinkle with lemon pepper, and cover with foil.
  • Bake 15–20 minutes in the pre-heated oven, pour the remaining butter mixture over the fish, then serve with rice and steamed carrots.
