Fish with Lemon Butter
Lemon and fish make for a naturally delicious pairing, and this Lemon Butter Sauce will complement your fish beautifully. Perfect with sole, salmon or cod.

Ingredients
- 500g fish fillets (sole, salmon or cod)
- 1tbsp butter
- Juice of 1 lemon
- 1tsp salt
- 1tsp ground pepper
- 3 cloves garlic, minced
- 2tbsps lemon pepper
- 1tbsp fresh chopped parsley or dill
Method
- Pre-heat oven to 175°C. Melt the butter in a medium saucepan over medium heat, mix in lemon juice, salt, pepper, parsley, and garlic, bring to the boil and cook for about 10 minutes over a low heat, until slightly thickened.
- Arrange fish fillets in a single layer on a medium baking sheet. Cover with ½ the butter mixture, sprinkle with lemon pepper, and cover with foil.
- Bake 15–20 minutes in the pre-heated oven, pour the remaining butter mixture over the fish, then serve with rice and steamed carrots.
