This Creamed Mushroom recipe makes a tasty side dish – or add to omelettes for a delicious twist.

Ingredients

  • 250g mushrooms, sliced
  • 1 tablespoon olive oil
  • ½ onion, chopped
  • 1 clove garlic, crushed
  • 100ml Elmlea Double Light
  • 1 dessertspoon parsley, chopped

Method

  • Saute mushrooms in olive oil over medium to high heat, then add onion and garlic. Allow to soften and stir to avoid burning for 10 minutes.
  • Add the cream and parsley and allow to simmer for 10 more minutes.
  • Serve a side dish, or use as a crepe or omelette filling.
