Who says pancakes need to be sweet? These potato pancakes will go down a treat with the whole family and are delicious served with sour cream or apple sauce (for those who still want a taste of something sweet).

Ingredients

  • 500g potatoes, peeled and grated
  • 1 medium onion, grated
  • 2 eggs
  • ½ Knorr Vegetable Stock Cube dissolved in 1tsp of water
  • 2–3tbsps flour

Method

  • Mix grated potatoes and onions together. Drain the mixture as much as possible, using sieve. Beat in the eggs, flour and stock cube and mix together.
  • In a large pan heat oil until hot, but not smoking, and drop in spoons of batter and spread into 5cm circles.
  • Fry until brown on the bottom and crisp on the edges. Serve with sour cream and chives or top with sauteed mushrooms.
