Potato Pancakes
Who says pancakes need to be sweet? These potato pancakes will go down a treat with the whole family and are delicious served with sour cream or apple sauce (for those who still want a taste of something sweet).

Ingredients
- 500g potatoes, peeled and grated
- 1 medium onion, grated
- 2 eggs
- ½ Knorr Vegetable Stock Cube dissolved in 1tsp of water
- 2–3tbsps flour
Method
- Mix grated potatoes and onions together. Drain the mixture as much as possible, using sieve. Beat in the eggs, flour and stock cube and mix together.
- In a large pan heat oil until hot, but not smoking, and drop in spoons of batter and spread into 5cm circles.
- Fry until brown on the bottom and crisp on the edges. Serve with sour cream and chives or top with sauteed mushrooms.
