This pork roast is full of the autumnal flavours associated with the German celebration of Oktoberfest. Serve with Sauerkraut, dumplings and a mug of Bavarian beer for a true flavour of the festival.

Ingredients

  • 500g canned white beans, drained
  • 1.5kg boneless pork loin roast
  • 1tbsp dry sage
  • 1tbsp ground allspice
  • Dash of pepper and cayenne pepper
  • 2tbsps cooking oil
  • A handful of fresh parsley, chopped
  • 150ml stock made from Knorr Chicken Stock Cube
  • 2 tart apples, cut in wedges
  • 2 medium size red onions, cut in wedges

Method

  • Combine sage, pepper, allspice and cayenne; rub over roast.
  • Brown the meat on all sides in oil over high heat, move to a roasting pan.
  • Pour in the broth. Cover and roast for 1.5 hours at 200°C , add apples, onions and beans, and simmer for 30 minutes more. Let stand for 10–15 minutes before slicing.
