Oktoberfest Pork
This pork roast is full of the autumnal flavours associated with the German celebration of Oktoberfest. Serve with Sauerkraut, dumplings and a mug of Bavarian beer for a true flavour of the festival.

Ingredients
- 500g canned white beans, drained
- 1.5kg boneless pork loin roast
- 1tbsp dry sage
- 1tbsp ground allspice
- Dash of pepper and cayenne pepper
- 2tbsps cooking oil
- A handful of fresh parsley, chopped
- 150ml stock made from Knorr Chicken Stock Cube
- 2 tart apples, cut in wedges
- 2 medium size red onions, cut in wedges
Method
- Combine sage, pepper, allspice and cayenne; rub over roast.
- Brown the meat on all sides in oil over high heat, move to a roasting pan.
- Pour in the broth. Cover and roast for 1.5 hours at 200°C , add apples, onions and beans, and simmer for 30 minutes more. Let stand for 10–15 minutes before slicing.
