Potato Salad Swabian Style

A nice change from normal potato salads, this German recipe is a speciality served "wet".

Ingredients

  • 1kg potatoes
  • 1 large onion, chopped finely
  • 250ml hot stock made from a Knorr Beef Stock Cube or Knorr Chicken Stock Cube
  • Pepper if required
  • 6tbsps vinegar
  • 6tbsps sunflower oil
  • 1 bunch(es) dill, or chives, chopped
  • 100g fresh cucumber, sliced
  • 5 spring onions, finely chopped

Method

  • Boil the potatoes with skins until soft, then peel and slice them while still hot. Let them cool.
  • Add the onion, mix the hot stock with pepper and vinegar and pour ⅓ of it over the potatoes. Let the salad soak for 30 minutes, and check if more stock is required.
  • Add the oil and herbs, the chopped spring onions and thinly sliced cucumber. Mix thoroughly, and allow to soak again for a short time. The salad should be “wet”.
