Beef-Stuffed Courgettes
It’s not only peppers and mushrooms that work well when stuffed – courgettes are also delicious hollowed out and filled with beef and cheese. This dish makes for a tasty starter or side. Or eat alone as a satisfying lunch.

Ingredients
- 4 medium courgettes
- 500g minced beef
- 100g onion, chopped
- 150ml tomato sauce such as Knorr Napoli sauces/Bertolli/Pasta al Gusto
- 200g Cheddar cheese, grated
- Salt & pepper to taste
Method
- Cut courgette in half lengthwise; cut a thin slice from the bottom of each with a sharp knife to allow courgette to sit flat. Scoop out pulp, leaving hollowed out shells.
- Mix the beef, pulp of the courgette, onion, salt and pepper with tomato sauce.
- Fill the shells with the mix. Pre-heat the oven to 180°C and bake for 20 minutes.
- Add grated cheese, and bake for additional 5 minutes, or until the cheese is properly melted and becomes golden, and the meat thoroughly cooked through.
