Courgettes with Parmesan
This is a really quick dish but is full of flavour. Serve your courgette with parmesan as a side dish with meat or fish, or layer on top of pasta as a main meal.

Ingredients
- 3–4 garlic cloves, finely chopped
- 1tbsp oil
- 4 medium courgettes, cut into 1cm slices
- 400g can Italian chopped tomatoes
- 1 Knorr Vegetable Stock Cube
- 100g Parmesan cheese, grated
- Pepper
Method
- In a large frying pan, saute garlic in oil.
- Add courgette, and saute for 4–5 minutes until lightly golden.
- Stir in the tomatoes, the Knorr Vegetable Stock Cube and pepper.
- Simmer, uncovered, for 9–10 minutes or until liquid is reduced and heated through. Sprinkle with Parmesan cheese.
