Courgettes with Parmesan

This is a really quick dish but is full of flavour. Serve your courgette with parmesan as a side dish with meat or fish, or layer on top of pasta as a main meal.

Ingredients

  • 3–4 garlic cloves, finely chopped
  • 1tbsp oil
  • 4 medium courgettes, cut into 1cm slices
  • 400g can Italian chopped tomatoes
  • 1 Knorr Vegetable Stock Cube
  • 100g Parmesan cheese, grated
  • Pepper

Method

  • In a large frying pan, saute garlic in oil.
  • Add courgette, and saute for 4–5 minutes until lightly golden.
  • Stir in the tomatoes, the Knorr Vegetable Stock Cube and pepper.
  • Simmer, uncovered, for 9–10 minutes or until liquid is reduced and heated through. Sprinkle with Parmesan cheese.
