Andalusia Gazpacho
A cool and refreshing soup for a hot summer day. Often eaten in southern parts of Spain, try as a flavourful start to a meal.

Ingredients
- 6 ripe tomatoes
- 1 medium cucumber
- 3 red peppers
- 1tbsp Hellmann's light mayonnaise
- 1 slice white bread made into breadcrumbs
- 1 clove of garlic
- 1tsp paprika
- 2 Knorr Vegetable Stock Cubes dissolved in 1 litre of water
Method
- Peel and clean the cucumbers, tomatoes and peppers and cut them into small chunks. Put in a liquidiser together with a little water.
- Strain the mixture with a colander and add a little water if necessary. Add the breadcrumbs and keep in the refrigerator for an hour.
- Crush the garlic and add to the fridge mix with paprika and mayonnaise.
- Then add some ice cold Knorr Vegetable Stock Cubes mixture. Fill little bowls with this gazpacho and serve with little pieces of bread, tomato, cucumber and pepper.
