Swordfish is a satisfyingly meaty fish, and the Italian dill in this recipe, along with lime juice, white wine and a Knorr Stock Cube, complements the flavour incredibly well.

Ingredients

  • 400g fresh swordfish
  • 50ml white wine
  • 8 cherry tomatoes
  • 1tbsp lime juice
  • 1 garlic clove
  • 1 Knorr Fish Stock Cube
  • 50ml olive oil
  • 1 fresh Italian dill
  • Fresh basil

Method

  • Crush half of the Knorr Stock Cube and mix it with olive oil and chopped garlic. Add white wine and lime juice.
  • Cut swordfish into 4 steaks. Place them in a large bowl and pour the mixture onto them.
  • Cut dill into slices and cherry tomatoes into halves.
  • Prepare 4 parcels out of aluminium foil. Place fish inside, and fill with tomatoes, dill and fresh basil leaves. Close the parcels and grill for 20 minutes.
