Masoor Dal
The Masoor Dal is an lentil-based dish that works well as a side dish to most Indian cuisine. It’s particularly delicious with roti or naan bread.

Ingredients
- 600g red lentils, you can use yellow lentils
- 2l stock made from Knorr Stock Cube or jelly
- 4 garlic cloves, chopped
- 4 fresh ginger roots, thinly sliced
- 2tbsps chopped fresh corinder or parsley
- 2tsps turmeric
- ½tsp cayenne pepper
- Lemon juice to taste
- 1tbsp olive oil
- 2tsps cumin seeds
Method
- Rinse and drain the lentils. Place them in saucepan, add stock and bring them to the boil. Skim any froth that rises to the top.
- Add the garlic, ginger, coriander, turmeric, and cayenne. Simmer until the lentils are very tender and falling apart, about 45 minutes. Add the lemon juice to taste. Heat the oil in a small saucepan. Add cumin and cook for a few seconds to release the aroma.
- Pour into the dal. Serve with basmati rice and garnish with coriander or parsley.
