Chicken Fajitas Wrap
These quick and easy Mexican-style wraps are as fun to eat as they are to make. You can even get your guests or family involved by letting them fill their own wraps.

Ingredients
- 500g boneless chicken breast, cut into slices
- 2tbsps olive oil
- 1 onion cut into thin strips
- 3 peppers, sliced into thin strips
- 6 tortilla wraps
- Marinade for chicken:
- 2tbsps olive oil
- 1 clove garlic, finely chopped
- 2tbsps fresh squeezed lime juice
- ½ Knorr Vegetable or Chicken Stock Cube
- 1 jalapeno pepper, deseeded and thinly sliced – if you like it hot
- A handful of chopped fresh coriander
Method
- Prepare the marinade by mixing well olive oil, lime juice, garlic and crumbled Knorr Stock Cube. Mix with the chicken and place in fridge for at least an hour to let the marinade penetrate the meat.
- Bring the meat to room temperature. Working in batches fry the chicken in olive oil for 5–10 minutes over high heat until well seared. Remove from the pan and cover with aluminum foil.
- Add 1 tablespoon of oil to the pan, fry cut peppers and onions for 5–7 minutes to soften the vegetables and brown a bit. Keep the vegetables in a single layer for better cooking and stir once or twice.
- Add chicken back to the pan. Cook for 2–3 minutes more and add coriander. Serve wrapped in warm tortillas.
