This is a really tasty supper dish that can be made in just half an hour. Serve with rice or sautéed potatoes for a quick yet delicious midweek meal.

Ingredients

  • 1tbsp vegetable oil
  • 1 onion, finely diced
  • 600g sliced pork tenderloin
  • 200g sliced mushrooms
  • 1 red pepper
  • 1 Knorr Pork Stock Cube
  • 125ml boiling water
  • 2tsps paprika
  • 1tsp Dijon mustard
  • 1tsp cornflour
  • 125ml sour cream
  • 1tsp chopped parsley
  • Black pepper to season

Method

  • Heat the oil in a large frying pan. Add the pork and stir-fry lightly – just until it turns colour, say 5–6 minutes.
  • Add the onion, mushrooms, and red pepper, and cook for 2–3 minutes.
  • Add the water, stock cube, paprika, Dijon mustard, and thyme. Bring the mixture back to the boil.
  • Mix the cornflour with a little cold water to make a paste and add to the pan, stirring for 5 minutes or until the pork is cooked through and the sauce is a thick consistency.
  • Remove from heat and stir in the sour cream, parsley and black pepper.
