Pork Stroganoff
This is a really tasty supper dish that can be made in just half an hour. Serve with rice or sautéed potatoes for a quick yet delicious midweek meal.

Ingredients
- 1tbsp vegetable oil
- 1 onion, finely diced
- 600g sliced pork tenderloin
- 200g sliced mushrooms
- 1 red pepper
- 1 Knorr Pork Stock Cube
- 125ml boiling water
- 2tsps paprika
- 1tsp Dijon mustard
- 1tsp cornflour
- 125ml sour cream
- 1tsp chopped parsley
- Black pepper to season
Method
- Heat the oil in a large frying pan. Add the pork and stir-fry lightly – just until it turns colour, say 5–6 minutes.
- Add the onion, mushrooms, and red pepper, and cook for 2–3 minutes.
- Add the water, stock cube, paprika, Dijon mustard, and thyme. Bring the mixture back to the boil.
- Mix the cornflour with a little cold water to make a paste and add to the pan, stirring for 5 minutes or until the pork is cooked through and the sauce is a thick consistency.
- Remove from heat and stir in the sour cream, parsley and black pepper.
