Sofrito is a sauce used as a base in Spanish, Portuguese and Latin American cooking – it goes well in soups, stews and rice dishes, or pair it with vegetables.

Ingredients

  • Sofritto:
  • 50g olive oil
  • 100g onion, diced
  • 100g carrots, diced
  • 50g celery, diced
  • 1 Knorr Vegetable Stock Cube
  • Tomato sauce:
  • 2 x 400g cans of tomatoes, or freshly peeled

Method

  • Heat oil in pan and add 1 Knorr Vegetable Stock Cube.
  • Add diced carrots and onions. After 4 minutes add celery. Ensure no colouring takes place. Stir well.
  • Allow to braise for 16 minutes. Afterwards add tomatoes, either fresh or canned.
  • Finish with spices like rosemary, oregano or basil and add the right type of cheese: Parmesan or Pecorino.
