Sofrito
Sofrito is a sauce used as a base in Spanish, Portuguese and Latin American cooking – it goes well in soups, stews and rice dishes, or pair it with vegetables.

Ingredients
- Sofritto:
- 50g olive oil
- 100g onion, diced
- 100g carrots, diced
- 50g celery, diced
- 1 Knorr Vegetable Stock Cube
- Tomato sauce:
- 2 x 400g cans of tomatoes, or freshly peeled
Method
- Heat oil in pan and add 1 Knorr Vegetable Stock Cube.
- Add diced carrots and onions. After 4 minutes add celery. Ensure no colouring takes place. Stir well.
- Allow to braise for 16 minutes. Afterwards add tomatoes, either fresh or canned.
- Finish with spices like rosemary, oregano or basil and add the right type of cheese: Parmesan or Pecorino.
