Get a taste of the Med with this delicious seasoning for chicken – even better with chunks of tomato, courgette and red pepper tossed into the baking bag. A quick, tasty dinner to enjoy with cous cous, pasta or potatoes.

Ingredients

  • 600g skinless chicken breast (approx 4 breasts) cut into large chunks
  • 150g (2) tomatoes quartered
  • 150g (1) courgette thickly sliced
  • 150g (1) red pepper cut into chunks
  • Season and Shake Mediterranean Chicken

Method

  • Preheat oven to 190°C (fan assisted 170°C), Gas mark 5. Tear open top of pack & remove folded bag. Peel off sticker and unwrap, keeping the blue tie. Resting the bag on a work surface , gently place all fresh ingredients in the bag and add seasoning from bottom sachet.
  • Close and tie bag with the blue tie, approx 2cm from the opening. Supporting the weight of the bag with one hand, shake very gently until all the ingredients are evenly coated in seasoning. Place in a non-heated ovenproof dish so that the bag is sideways, ensuring chicken is evenly spaced.
  • Place dish on a low shelf of preheated oven for 40 mins. Ensure enough room for bag to expand when cooking. (Bag must not touch sides or top of oven). When cooked cut open bag (attention hot steam) check meat is fully cooked and empty contents into dish.
  • RECIPE HINT: Serve with potatoes, rice, cous cous or pasta.
