Eggs Florentine
Treat yourself to a classic weekend brunch with Eggs Florentine. For a little extra indulgence, serve up alongside some lightly toasted bagels with smoked salmon.

Ingredients
- 1 packet chopped frozen spinach or 1kg fresh spinach leaves
- 8 eggs
- 250ml prepared Knorr Hollandaise Sauce
- A handful of grated Parmesan cheese or Gruyere cheese
Method
- Poach the eggs in boiling water with some vinegar; use a slotted spoon.
- Cook spinach according to pack instructions or steam lightly for 5 minutes. Prepare the lightly buttered shallow baking dish.
- Pre-heat the oven to 220°C. Arrange a layer of spinach in a baking dish. Follow with the poached eggs and top with the hollandaise sauce. Sprinkle with cheese and bake for 5 minutes or until the cheese melts.
